Salsa Verde, Eggs, Courgette & Halloumi

I loved being in Auckland at the weekend to see the America’s Cup (yay WINNERS 🏆). Whilst there I ate at one of my favourite cafes THE STORE! (Britomart)


I ate this dish twice as it was so good! You can make it at home -

  • Pan fry courgette chunks, halloumi, onion

  • Scramble or cook two eggs how you like them

  • Chop some some chilli & salsa verde (which you can buy or make as below. Or even use some pesto)

  • Add some dukkah

  • Layer this up & enjoy!
